Image Analysis of Food Microstructure

Image Analysis of Food Microstructure

$199.95

Image Analysis of Food Microstructure offers a condensed guide to the most common procedures and techniques by which quantitative microstructural information about food can be obtained from images. The images are selected from a broad range of food items, including macroscopic images of meat and finished products such as pizza, and the microstructures of cheeses, dough and baked goods, ice cream, fruits and vegetables, emulsions, foams, and gels. The book informs food scientists about the image processing and measurement tools used to characterize a variety of microstructures in foods, using high-quality image techniques to illustrate chemical composition, thermo-mechanical processing, and genetic and structural properties. These different types of images used to measure various aspects of structure include: macroscopic light photography, confocal light microscopy, electron microscopy, atomic force microscope images, magnetic resonance, and computed tomography. Then the text explains how to interpret images to produce data, plot the results in different graphs, and identify trends. Examples using these image analysis techniques show typical results that researchers can expect and recreate. Image Analysis of Food Microstructure summarizes the basic procedures that can be useful in various aspects of food research, from nutraceuticals to cooking and food processing. Gabriel Orozco

Gabriel Orozco

$22.94

Gabriel Orozco’s work is sometimes considered uncategorizable; but his sculpture, photography, drawing, collage, and installations are unified by their devotion to the antispectacular, to the everyday, and to the explorations of complexities that are not immediately obvious. Orozco (born in Mexico in 1962) pays meticulous attention to what he calls the "liquidity of things" as seen in mundane and evanescent objects and elements of everyday life–the momentary fog on a polished piano top, a deflated football, tins of cat food balanced on watermelons, light through leaves, the screech of a tire, chess pieces on a chessboard. "People forget that I want to disappoint," he has said. "I use that word deliberately. I want to disappoint the expectations of the one who waits to be amazed. When you make a decision someone is going to be disappointed because they think they know you. It is only then that the poetic can happen." This collection of critical writings on Orozco includes two interviews with the artist and a lecture by him (this last published here for the first time in English) as well as essays by such prominent critics as Benjamin H. D. Buchloh, Briony Fer, Molly Nesbit, and the editor of the volume, Yve-Alain Bois. It serves both as the summation of critical thinking on Orozco’s work up to now and as a starting point for future consideration. "October Files"

Bayonne

Bayonne

$17.89

Since the development of photography in the mid-nineteenth century, the camera has been used as a tool of both discovery and preservation. Photographs bring alive our picture of the past and can open a floodgate of memories and nostalgia or inspire curiosity and a sense of history. Collected in this intriguing visual history are over two hundred photographs which bring to life the rich and diverse history of Bayonne, New Jersey, from 1860 to 1940. Bayonne has made a number of significant contributions to American culture: from the country’s first "rock band" and its first independent movie studio, to its first air-mail delivery and fast-food restaurants. This visual history brings these little-known contributions to light while also focusing on the everyday lives of the people of Bayonne. In this fascinating journey into the past, we move from disasters such as the Standard Oil fire of 1900 to celebrations such as the arrival of a Wild West Show at the 8th Street station. Views of the lighthouses and the old New York Bay shore document the continued importance of the city’s two shores, even as it transformed itself from being the "Newport on the Hudson" to the "Peninsula of Industry."

Noodles the New Way

Noodles the New Way

$4.95

Sumatra-born, London-based food writer and cooking consultant Sri Owen has traveled throughout Asia to research regional cuisines for her previous books. But it was in London that she realized that noodles had become the health food of choice in the western hemisphere as well. The fusion of Sri’s worlds inspired her to write Noodles: The New Way, which presents more than 80 recipes that marry authentic Asian dishes with a Western feel. The book is a contemporary collection of dishes from Indonesia, Malaysia, Vietnam, Thailand, China, Singapore, Japan, India and Bali that can be made from ingredients found at local Asian markets. In the introduction Sri Owen pays homage to the personality characteristics of noodles – they’e lean, quick, flavorful, and democratic. Images by renowned food photographer Gus Filgate won this book a James Beard Foundation award for Best Photography. The photographs capture the varying temperatures, textures, hues and incarnations of noodles – the image for the Fried noodles on Portobello mushrooms recipe sizzles with vibrant orange, green, and brown. Next, Owen describes the types of noodles – such as egg, rice, and Udon – and explains basic cooking techniques. There are recipes for stocks, such as miso stock, dipping sauces, dressings, There are recipes for vegetarian, seafood, poultry, and meat dishes. Owen suggests fine egg noodles with scrambled tofu, which can be made with angel hair pasta, and the protein-rich avocado and tofu tempura. For light, lean dishes there are formulas for asparagus tips with crab wontons, Indonesian chicken soup and Vietnamese noodle soup with steamed duck. For meat-lovers, Owen proposes barbecued pork spareribs with shitakenoodles, as well as traditional Pad Thai. The section on noodle salads offers a variety of distinctive recipes, such as cold soba noodles with lobster meat salad and green papaya and mango salad. The book rounds out with a glossary that clarifies more unusual ingredients. Throughout the book, Owen demonstrates how tastes and textures from different sources can work together to create new noodle recipes that are both eastern and western, traditional and modern. "The imaginative cook may well feel like an artist who has been given a paint box full of completely new colors," she gushes.

Reading Boyishly: Roland Barthes, J. M. Barrie, Jacques Henri Lartigue, Marcel Proust, and D. W. Winnicott

Reading Boyishly: Roland Barthes, J. M. Barrie, Jacques Henri Lartigue, Marcel Proust, and D. W. Winnicott

$31.94

An intricate text filled to the brim with connotations of desire, home, and childhood–nests, food, beds, birds, fairies, bits of string, ribbon, goodnight kisses, appetites sated and denied–"Reading Boyishly" is a story of mothers and sons, loss and longing, writing and photography. In this homage to four boyish men and one boy–J. M. Barrie, Roland Barthes, Marcel Proust, D. W. Winnicott, and the young photographer Jacques Henri Lartigue–Carol Mavor embraces what some have anxiously labeled an over-attachment to the mother. Here, the maternal is a cord (unsevered) to the night-light of boyish reading. To "read boyishly" is to covet the mother’s body as a home both lost and never lost, to desire her as only a son can, as only a body that longs for, but will never become Mother, can. Nostalgia (from the Greek "nostos" = return to native land, and "algos" = suffering or grief) is at the heart of the labor of boyish reading, which suffers in its love affair with the mother. The writers and the photographer that Mavor lovingly considers are boyish readers "par excellence": Barrie, creator of Peter Pan, the boy who refused to grow up; Barthes, the "professor of desire" who lived with or near his mother until her death; Proust, the modernist master of nostalgia; Winnicott, therapist to "good enough" mothers; and Lartigue, the child photographer whose images invoke ghostlike memories of a past that is at once comforting and painful. Drawing attention to the interplay between writing and vision, "Reading Boyishly" is stuffed full with more than 200 images. At once delicate and powerful, the book is a meditation on the threads that unite mothers and sons and on the writers and artists who create from those threads art that captures an irretrievable past.

Colorants for Non-Textile Applications

Colorants for Non-Textile Applications

$385

This volume examines the chemistry of natural and synthetic dyes produced for non-textile markets, where much new basic research in color chemistry is now taking place. The first group of chapters covers the design, synthesis, properties and application technology pertaining to dyes for digital printing and photography. The reader will be pleased with the breadth and depth of information presented in each case. Of particular interest is the discussion of strategies for the design of dyes in these categories, with emphasis on enhancing technical properties. In view of certain new developments, the ink-jet chapter includes results from studies pertaining to dyes for textiles. The three chapters comprising Section II of this volume cover the broad subject of dyes for food, drug and cosmetic applications and then provide an in-depth look at dyes for biomedical applications and molecular recognition. The chapter on dyes for molecular recognition places emphasis on applications in the biological sciences, including sensory materials and artificial receptors. While the former two topics have been covered elsewhere in the past, the present chapters are unequalled in scope. Section III provides an in-depth review of the design of laser dyes and dye-based functional materials. In the first of the two chapters, the major principles of laser operation are summarized. This is followed by a discussion of spectroscopic properties, such as activation and deactivation of absorbed light by laser dyes. Approaches to the development of new laser dyes are presented. The second chapter pertains to the synthesis of dicyanopyrazine-based multifunctional dyes. The visible and fluorescence spectra of these dyes in solution and the solid state are correlated with their three-dimensional molecular structures. Molecular stacking behavior and solid state properties of these “multifunctional” dye materials are presented. The final group of chapters pertains to natural dyes and dyes for natural substrates. In recent years, the impression among certain consumers that “natural” is better/safer has generated much interest in the use of natural dyes rather than synthetics. This has led to a few short discussion papers in which the environmental advantages to using natural dyes have been questioned. The initial chapter in this group provides both a historical look at natural dyes and a comprehensive compilation of natural dye structures and their sources. Though natural dyes are of interest as colorants for textiles, selected ones are used primarily in food and cosmetics. Chapter ten provides an update on the author’s previous reviews of structure-color-relationships among precursors employed in the coloration of hair. Chemical constitutions characterizing hair dye structures are presented, along with a summary of available precursors and their environmental properties. Similarly, the chapter on leather dyes covers constitutions and nomenclature, in addition to provid

Ocean Travel and Cruising

Ocean Travel and Cruising

$59.95

A one-of-a-kind analysis of ocean cruising! In Ocean Travel and Cruising: A Cultural Analysis, noted author Arthur Asa Berger turns his critical eye to the phenomenon of ocean cruising. This academically solid yet reader-friendly book brings a multidisciplinary cultural studies approach to the subject, examining ocean cruising from economic, semiotic, sociological, psychoanalytic, and marketing perspectives, and offering insights not provided by the more traditional sociological approaches to the subject. You’ll explore cruise demographics, the relationship between cruising and gender, the sociology of dining on cruise ships, hedonism and pleasure seeking, the ?compulsion to cruise,? consolidation in the industry, the exploitation of workers on cruise ships, and a great deal more. Here’s a section-by-section rundown of what’s in store for you and your students in this one-of-a-kind new text: ?The Economics of Cruising? examines cruise categories, industry consolidation, worker exploitation, and ways that cruise lines make money aside from ticket sales. This section also compares the costs of cruises vs. land-based vacations and fills you in on the typical weekly food and beverage consumption of the Carnival line’s complement of ships, which sheds light on how a cruise line can, for a mere $10, provide a food array that would cost a restaurant or hotel $33 to $40. ?Signs at Sea?The Semiotics of Cruising? provides you with a quick primer on semiotics and then discusses the cruise ship as a sign system and then breaks the system down to its component parts, discussing dining rooms, cabins/staterooms, dress codes, spatiality, luxury signifiers, the perceived elitism of the cruise experience, the role of photography, and more. ?A Sociological Analysis of Cruising? explores cruise demographics and their meaning, time budgeting on cruises, the sociology of dining, new trends in cruising, and the meaning of gender in relation to ocean cruising. A particularly intriguing chapter is ?A Psychoanalytic Interpretation of Cruising.? Beginning with a look at the compulsion to cruise, this section explores cruising’s relationship with the unconscious, the paradise myth, hedonism and pleasure seeking, the desire for unconditional love, psychological regression, and more. In ?Selling Smooth Sailing: Advertising and Marketing Cruises,? you’ll examine print advertisements from eight major cruise lines, look at what they have in common and what the differences are between the messages each cruise line hopes to convey via the style and content of their ads and brochures. ?Cruising (on) the Internet? looks at the intersection of the information superhighway with the world of cruising. You’ll learn about the cruise lines’ own Web sites, travel agency sites, Internet sites designed to rate and review cruises and cruise ships, and more. ?Notes from a Cruise Journal? shares the author’s on-site reflections and impressions of a weeklong cruise fro

Bowens Small, Silver Interior Reflector with Umbrella Bracket for Gemini Monolights.

Bowens Small, Silver Interior Reflector with Umbrella Bracket for Gemini Monolights.

$62.95

Bowens International is proud to introduce a higher performance, stronger and more robust line of reflectors to their already superb reflector range. The revised reflector range includes 14 different models of reflectors and light shapers. Each model is constructed of a heavier gauge of aluminum than the original units for greater strength and durability. Another important enhancement to the entire line is an improved integral steel attachment ring that provides secure and safe positioning onto the flash unit. Further improvements have been made to the Wide Angle / Umbrella reflector, the Keylite Reflector and the Softlite Reflector. These impressive improvements have been incorporated without increasing the cost of the range. The new reflectors feature an integral mounting ring that is more rugged than Bowens previous design and gives much greater overall strength to the reflectors This, combined with a slightly heavier material, has created a reflector that Bowens believes will be better suited to the daily rigours of the professional photographer. Additionally, Bowens has been able to create a brighter surface finish for two of their new reflectors, the Wide Angle / Umbrella Reflector and the Keylite Reflector. The redesigned Softlite Reflector now features a new surface finish. The original sandblasted finish has been replaced with a neutral-colored powder coating. In testing, this new coating delivers a slightly smoother finish, giving a broader spread of light without losing any of the softness that has made this light source so popular. The High Performance Reflector is a completely new reflector, designed to fulfill the demand for a bright, narrow angle light source. The highly parabolic design delivers a narrow beam of light with the maximum brightness. This reflector will create intense shadows and is perfect for creating high contrast lighting effects. Its texture enhancing output is perfect for food and fashion photography. The High Performance Refl

Digital Concepts 55mm Circular Polarizer Coated Glass Filter

Digital Concepts 55mm Circular Polarizer Coated Glass Filter

$7.99

Circular Polarizing Filters are used to increase color saturation, like darkening blue skies so that white clouds stand out. It eliminates reflections from non-metallic surfaces like glass and water. It helps reduce softness in scenery caused by atmospheric haze. This filter will not change the overall color balance of a photograph. Polarizers are commonly used to control glare on water and to allow the camera to see below the surface. They are also used to reduce glare on car bumpers and to control reflections on plate-glass windows. Polarizers are so versatile that they can perform the opposite functions as well. Some cinematographers use polarizers to increase or enhance reflections, simply by changing the filter?s setting. Circular refers not to the shape, but a special design that does not interfere with metering of auto exposure or auto focus systems There is virtually no limit to the new ways Directors of Photography find to use effective polarizers. A few examples of what they can do include: Darkening skies in color photography for dramatic impact. While graduated neutral density filters can also be used to achieve this effect, the need to position their transition line accurately precludes their use in many applications. Polarizers do not suffer from this limitation. Suppressing reflections and capturing truer color when filming actors through a windshield, and from other rigged-car camera positions. Greatly adding to the drama and appeal of the shot when photographing food (particularly meat or liquids). Increasing the color saturation of any object with a glossy surface. In summary, virtually any subject involving glare or reflections, or that is illuminated with specular light, can be improved through the skillful use of a quality polarizing filter.

In addition to the more inventive combinations, including grilled cheese for dessert, there’s always room at the table for the classics: grilled American on white, or apple, ham, and cheddar on sourdough.Werlin discusses techniques-nonstick versus cast-iron pan, whether to cover during cooking, how to use the ultrapopular panini machine. Maren Caruso’s tantalizing photographs perfectly convey the appeal of creamy melted cheese pressed between two slices of crisp, buttery bread. For cheese aficionados, parents whose kids insist on grilled cheese at every meal, and the kid in all of us who craves comfort food, Great Grilled Cheese will satisfy everyone’s cheese dreams.Author Bio: LAURA WERLIN is a food journalist and cheese expert whose articles have appeared in Saveur, Cooking Light, and Country Living.
